Good Old-Fashioned Pancakes, Dex+


This is a Dex+ version of "Good Old-Fashioned Pancakes" from Allrecipies. The origingal recipe uses the simplest ingredient list, and results in terrific pancakes. My husband liked them quite a bit, and he's not even a pancake fan.

We doubled the recipe, added vanilla, and adjusted the sugar and fiber to be Dex+. This is the thing to make when we want waffles, but we're out of buttermilk.

We froze the extras, and the kids toasted them on "defrost", having them for breakfast on school mornings. I didn't get any because they ate them all. I take that as an endorsement. Have them with Maple Syrup Dex+, and try with some blueberries thrown into the batter too.

Maple Syrup Dex+

Maple syrup is an amazing thing; except that it has a lot of fructose in it. Use the darkest maple syrup you can find, and this syrup blend packs a great flavor. We find it delicious, and a bit less intensely sweet than 100% maple. It beats any "maple flavored pancake syrup" available at the grocery, no question. And it's Dex+, which means less fructose, with fiber.  :)

Waffle of Insane Greatness Dex+

These waffles really are great! The outside had a crispy crunch, inside was creamy, overall they were light and wonderful. The first waffle was actually a tad lighter brown than the rest, but was still good. They were flavorful and delicious. Butter, a light dusting of dextrose, a drizzle of Maple Syrup Dex+, and maybe a handful of fresh berries... mmm... One Dex+ waffle will leave you happy until lunch time, if not later.

The recipe is also pretty simple, not requiring anything fancy like separating eggs and beating the whites. Between this and the pancake recipe I found earlier, we will not be buying any more mix. Allow any extra waffles to cool, then wrap, freeze, and reheat in the toaster. If we don't have buttermilk, we make Good Old-Fashioned Pancakes instead; substitutes aren't worth the effort.

Blueberry or Strawberry Jam Dex++

Blueberries, strawberries, blackberries, these are very nutritious and healthy to eat. What a shame that all the jars of jam at the grocery are sweetened with extra doses of fructose without the fiber to balance. It's not hard to do, especially with a bread machine that has a "jam" cycle. That's right, my Zojirushi bread machine. For more on fructose and Dex+, see the tabs, above.

I'm sure this could be made on the stove; I tried once, and was disappointed. Apparently they mean it when they warn about not over-stirring tapioca. If I didn't have the Zo, I'd probably try different thickeners that are easier to handle, but keep the rest of the recipe.

How does it taste? Well, like intense blueberries. Nice, clean, bold solid flavor. Same for strawberries. My daughter says it's way better than regular jam. It's a little less thick than store-bought jam, which makes it easier to spread, and it can also be used as a topping.

Doughnut Muffins Dex+




Breakfast food can be delicious, especially something sweet. I thought I'd give muffins a try, and I've made the regular version of these before. They're called doughnut muffins because the nutmeg and cinnamon make them taste a bit like doughnuts. I love doughnuts, but I don't love the hassle of frying them. Muffins are a lot easier.

Sugar and Cinnamon Sugar Dex+

This sugar blend is a good replacement for white sugar on your morning bowl of cereal, or on a tart pink grapefruit. You won't notice the fiber, and the sweetness is very similar.

You may also like a jar of cinnamon sugar. It's great for making cinnamon toast, and we like it on the Frozen Yogurt Dex+ too.

I have tried a variety of cinnamons, from Penzeys Spices: Korintje, China Cassia, Vietnamese, and Ceylon. Whichever kind you get, fresher cinnamon has a stronger, better flavor. Korintje is the "grocery" variety. Vietnamese has the same taste but is much stronger and better. Ceylon is the only "true" cinnamon, and reminds me of red-hots candy; not that it is hot, it's just a different note. I actually like a blend of Vietnamese and Ceylon.

Chocolate Syrup Dex+

Chocolate milk, hold (most of) the fructose please! Coming right up...  Have you found a bag of dextrose and made that simple syrup dex+ yet? If so, go get your Hershey's Special Dark Cocoa Powder, salt and vanilla, and whip up a batch. It'll only take a few minutes, and it is really impressively tasty. 

 

 I wish they sold this kind of chocolate milk to the kids at school!

First Waffles of Christmas!

Christmas gift: WaringPro Waffler
I got a new waffle iron for Christmas, and today was the day to try it out. We wore out the hinge on our last waffler. :) I'd been using Krustease pancake mix, which is very easy, especially for the kids. We were out of that, though, and it was time to find a better recipe.

I decided to try Food Network's Waffle of Insane Greatness, which was courtesy of Aretha Frankensteins, Show: $40 a Day Episode: Chattanooga, TN

The waffles were great! The outside had a crispy crunch, inside was creamy, overall they were light and wonderful. The first waffle was actually a tad lighter brown than the rest, but was still good. They were flavorful and delicious. We forgot to use butter, just added a light drizzling of real maple syrup, it didn't take much, didn't need anything more.

Pancakes

Based on the notion that 77,000 people might know a good pancake recipe, I chose "Good Old Fashioned Pancakes" from Allrecipies.com: 4.5 stars, 4,550 reviews. I had my kids make them. It's really easy. Turns out, it's really good too. My husband liked it quite a bit. He's not really a pancake fan, and has not really liked any of the other recipes I've tried. Go figure. ;)

Cheesy Breakfast Beans

As you might suspect from the title, this is not really a baking recipe. But it is quite good, and made a great substitute for cheese grits. It is here because I like it. :) It also helps make up for the sugar-shock of having cinnamon rolls for breakfast on other days. :D  I think it would also qualify as a low-carb recipe.
