Something Unusual

I've been trying to think of a "bread" that would go well with chili. I usually use Fritos, which I think are great in chili, but it seemed some sort of bread should work. But what? Crackers? Bread sticks? It would be best if it was quick to make, so you don't have to plan ahead too much.

The other evening in the shower, an idea just emerged from nowhere, simply appearing in my head. Scoop out some sourdough starter from the fridge, mix in self-rising cornmeal mix and water, and cook it kinda like a pancake.

My Chili Today

We play with our chili recipe, when we have new ideas, or when we're missing an ingredient.

This is a full-bodied chili, thickened with tortillas. It also has: chili powders, beef, bacon, tomatoes, beans, and a few surprise ingredients that you probably won't guess. We love it with Fritos, cheese, and sour cream. Tastes even better the next day, after the ingredients have time to blend.

Cheesy Breakfast Beans

As you might suspect from the title, this is not really a baking recipe. But it is quite good, and made a great substitute for cheese grits. It is here because I like it. :) It also helps make up for the sugar-shock of having cinnamon rolls for breakfast on other days. :D  I think it would also qualify as a low-carb recipe.

Sliders, Yum!

We made sliders at home, and they were definitely worth the trouble. We used Alton Brown's recipe, and added home-made buns from King Arthur Flour. Two of my favorite food sites, together making something wonderful! They're great in a sack-lunch too.

One Pie Crust to Rule Them All

This is THE Crust recipe that I may just use forever now. On my first try, I used it on a pumpkin pie. On my second, I used it on a pot pie, photo below, instructions in another post.  Crust was great, but the pumpkin pie was not noteworthy. Thanks so much to Pim, for sharing it on her blog. Please go read it. Here's the link again: http://chezpim.com/bake/how-to-make-the-perfect-pie-dough

I like it with salt added. I was eventually able to make it without extra water, as listed below. I use King Arthur All-Purpose flour.
